Weekday Salmon
Made easy-peasy dinner the other day. Gettin me some omega 3, WOOP. It’s super easy and is perfect for a filling spring meal. Get some salmon, preferably not frozen, but frozen works too (just soften it up in the oven for 5 min on low heat). Cut a long line in the middle of the fillet and fill with feta cheese until totally filled. After this spread some pesto on top of it, I used A walnut pesto that I found at home, but anything will work. After this get it back into the oven (175-200*) for about 30 minutes. The salmon should be light pink on the inside when you take it out.
As salmon is quite fat in itself I would just recommend eating it with a small salad and a light dressing made of olive oil and balsamico. Enjoysies

Sailing.
Pictures of Nils and Freddy out sailing their lasers one windy evening in Torekov. If I remember correctly both Freddy and Nils capsized more that one time. Still: good times. The pictures are of course from last year, however, I barley have the patience to wait another two months for coming up to Torekov. Another summer at one of the most baller places. On another note, don’t forget to check out Nils and Sigrid’s photoblog KOALA BEARS, super lovely stuff from my two talented friends.

So I’m finally back in Frankfurt, and have been for the last two weeks after almost a year of being a bit of everywhere. One of the highlights of being home is that I’m finally reunited with my camera (NOM), so more high quality will be headed this way. These ones I took when Carla and I went to the Zoo the other weekend, which was wonderful – so enjoy.
As I’ve been quite bad with updating I figured it’s time for a new challenge which will be to try and update the blog at least once a day. We’ll see how it goes. Furthermore, if I’m successful with this I’m planing on investing in a new camera back, since I can barley fit my camera and its lenses in it at the moment. No big plans for today, taking a long walk with Tori and then reinstating myself in my bed with a big cup of the blackest of coffees and my new obsession; White Collar. WOWO. Happy Sunday.
